Soba Noodles

Soba noodles (made from buckwheat) are one of my favourite types of pasta.
They are very easy to digest, cook in a jiffy and make the most delicious meal when paired with vegetables.
The following photo is one of my easy quick dinner recipes ; soba noodles, with butternut squash,
smoked tofu topped with sesame seeds and oil.
Perfect with a mesclun/rocket salad and a glass of white wine.

Oh i haven't had soba noodles in ages! The last time I found some they were half buckwheat and half wheat. Grrrr...Must seek out some 100% buckwheat ones. That food looks amazing!

I have seen them in the States and overhere but never in the UK. I'm sure that WF's stocks them. They
certainly do taste fabulous.

I've never had soba noodles...I'm going to have to rectify that soon!
