Vegan Roast Cauliflower

1 medium size cauliflower cut into florets
2 tbs olive oil
salt & pepper

Place the florets (cut into bite sizes) into a greased roasting tin. Drizzle the olive oil and toss.
Cook in a pre-heated oven 220°C 20-30 mins until golden brown.
Season with Maldon sea salt and freshly ground pepper.

Tip : Serve with couscous. You can also serve it with a vegan cream dip. It is also ideal
as a nibble with a pre-dinner drink.

I make my roasted cauliflower with olive oil and a very liberal amount of Madras curry powder.
It's the only way my husband will eat cauliflower.
 
I *just* made this for the first time two days ago. I added some curry powder too. Delicious!
