Anyone got any tips on potato storage? What I mean is, how to store for a few weeks without them sprouting. Obviously they will eventually sprout no matter what, I just thought there might be a way of delaying that. Also, I know onions make potatoes sprout faster, so I don't store them in the same room.

Place into a linen or cotton bag in a dark cook place; cupboard or garage.
 
at this time of year, when it is getting cooler and until it starts freezing, I keep them outside on our balcony in a cooler or in a tub as we do not have a cold cellar or garage available - I do also store some in the fridge when the weather is too hot/cold, I just keep them in plastic bags and they last a long time

I had been keeping my potatoes in the same drawer of my fridge as my onions. Thank you for letting me know, I will stop this now. I think both should be kept in a dark place.

Potatoes I don't ever keep in fridge, I do onions. In summer I'll keep potatoes in the basement if I buy a large amount.
I've had GMO potatoes that never sprouted, but instead would just rot. I've since made non gmo potatoes a priority
I think the greening of potatoes happens when stored in light? Not sure, just know it should be cut off cause can make you sick

Why potatoes shouldn't be stored in the fridge if possible:
