@shyvas I couldn't help noticing the statement about resistant starch in the video about potatoes (just above). I love to eat potatoes warm- but letting them cool changes the starch to a more slowly-digested resistant starch. I think that's known to be important for people who might be at risk for developing Type 2 diabetes.

letting them cool and then reheating is a great way to get resistant starch, however, I don't think potatoes have anything to do with diabetes... it is the fat clogging the cells that prevents the insulin from doing its job
