I will be moving away from my spouse who has been the chief cook in my life for the last 30 years. I am not great at meal planning and have come up with the following diet to compensate. It is somewhat mirrored off of the 7th Day Adventist diet. The greens of the lunch salad will change daily as will the veg of the dinners.
Any suggestions would be greatly appreciated!
My Lacto Ovo Vegetarian Diet (around 2000 Calories per day)
Breakfast
1 Whole Grain Bagel
2 Tbsp Peanut Butter
1 C Almond Milk (case)
1 C Mixed berries
Snack: 1/4 C Walnuts & 1 Brazil Nut
Lunch
Large Mixed Green & Veggie Salad
1 oz natural cheese
1 boiled egg
1/4 Avocado
1 T Olive Oil
1 C Almond Milk
Snack: 2 Fruit
Dinner
2 C Cooked Vegetables
1 C Lentils
1 C Brown Rice
1 C Almond Milk
Season Lentils with:
Carrots or Parsnips
Mushrooms
Inch of Ginger
½ Leek
Celery.Rosemary
