I don't know what to suggest about your husband's intense disagreement with your vegetarianism. Since you've said he doesn't want to understand, I'm assuming you've explained it to him- or at least tried to- but he didn't want to hear it. I'm also assuming that you weren't vegetarian when the two of you first met and then got married. Has he said exactly why your vegetarianism is a problem for him?
Most people aren't vegetarian (at least in the U.S., where I live, and the U.K., where you are). If you're looking for the company of other vegetarians, maybe joining a vegetarian social group would make you feel less alone. I don't know if this would make him even more cross than he is already.
