Vegan Easy strogganoff

I would have to come out and say that this is a rather crude attempt at what sort of resembles beef strogganoff. It's not meant to be any sort of authentic representation, but rather what I would call a "hack" to make for a quick and delicious dinner.

Ingredients:

1lbs seitan in chunks
half a box rotini noodles
2 packets of cheap onion soup mix (Careful, some are vegan, some are not)
1/2 a package of frozen onions & peppers
1 cup frozen peas
2 cups mushrooms
3 cups water
1/2 tablespoon dried parsley
1 teaspoon dried thyme
2 tablespoons cornstarch + 4 tablespoons water for thickening
salt and pepper to taste


Instructions:

Start by browning your seitan chunks in a little bit of olive oil, followed by the mushrooms, onions and peppers. Cook until frozen onions and peppers are soft and translucent. Then add the frozen peas and water. Bring to a boil and add your two packets of onion soup mix, followed by parsley and thyme. Boil until peas are nice and soft then slowly add the cornstarch water mixture while stirring to thicken into a gravy. Salt and pepper to taste, lower heat to a simmer for 20 minutes.

Mix with freshly prepared rotini noodles and serve.
