Whatcha Eatin?

I made something very simple. The local supermarket apparently had a new shipment of nice, fresh broccoli. I couldn't resist having a bit of it raw; then I cooked it just until it was still bright green and still a little crisp (but cooked). Then I cooked elbow macaroni in the still-hot water. Finally, I added some cooked beans and a bit of canola oil. Simple... but good.

Small plates: red lentil & vegetable soup with a sprinkle of lemon pepper/yeast flakes plus a drizzle of evo.
White cabbage slaw with sliced La Vie protein plus mayonnaise, yeast flakes/lemon pepper.
Wibble Strawberry jelly & soya cream.

A deconstructed Big Mac/Whopper (basically everything in a bowl instead of on a roll, because I didn't have any rolls, haha) with a Beyond burger, lettuce, tomatoes, onion, pickles, a vegan mayo sauce and mustard.

I love deconstructed meals in a bowl. I've done that a few times with veggie sushi, mainly because I hate seaweed and can't be bothered constructing it lol.

I always want to ask if a restaurant can make me a veggie roll without the seaweed but always too embarrassed to ask. 🤦🏻‍♀️

I do like the pickled ginger, and whatever kind of tofu they use to wrap some of it with. My son like sushi-veggie sushi, but it usually has avocado.

I hear you on making sushi, though I do make Cheap Lazy Vegan's sushi rectangles, which are delicious. I do like the seaweed, though, hehe.

I usually get it with avocado and cucumber.
I'm not sure if it's sushi without the seaweed lol. I thought sushi was raw fish and that technically, without the fish it's just called a roll. But idk. I call it veggie sushi.

I've had other type rolls with tofu that are really good. Wrapped in rice paper I think. I used to get something like that at Trader Joe's all the time. But since I moved to Connecticut I don't have a Trader Joe near me. 😔

Yes, I did. :) It's very simple. I haven't tried the sweet version, as I prefer the savory one this case. It's dense, but so good. Kind of chewy, like pizza dough. And I love it with jam on it. It's also good for dunking in soups. :D There are like a bajillion different versions, but the one I've settled on has 1 cup of flour, a tsp of baking powder, a pinch of salt and half a cup of water. Many recipes add a couple of tablespoons of fat, but I save that for the bit of oil in the pan to get it nice and golden brown on each side. I think the whole thing takes like 20 minutes.
