Some say it’s the boldest course we’ve ever served.
We call it The Esoteric.
It begins with Nerominded - a striking black charcoal base, as dramatic as it is delicious. Beneath its inky hue lies a world of flavour: earthy black truffle, garlic whispers, and rich, cheesy depth. A feast for the eyes and the palate.
Then comes Minerthreat - a smoky, umami-forward creation, ripened with activated charcoal and crafted from creamy cashews. Bold. Tangy. The kind of cheese that turns even the biggest vegan sceptic into a believer.

Served alongside jammy dried figs and freshly baked gf sourdough. A pairing as rustic as it is refined.
We’ve matched The Esoteric with a glass of Piquepoul from Languedoc, France - a wine with floral aromas, bright citrus notes, and vibrant acidity. Its fruity character and long, refreshing finish lift the boldness of the cheeses, making every bite and sip a perfect harmony.
