any cheese makers amongst us?
I've started making mold ripened cheeses and have a blue cheese down for aging. It was cultured in a dedicated wine fridge that I'm using as a cheese cave.
Then I put in a white mold but didn't clean the fridge first and now it has a combination of white and blue mold on it.
Is it safe to eat? I assume so since both molds are edible but just thought I'd check.
