Ingredients
- 1 finely diced onion
- 1 finely minced clove of garlic
- 1 tsp oil for frying
- a pinch of ground cinnamon
- 1x 400 g tin of chopped tomatoes
- 1 tsp dried basil
- 1x400g of butter beans
- 1 tsp sweetener
- 1 vegetable stock cube
- Fry the onions and garlic in oil on medium heat
- Add cinnamon and stir
- Add tomatoes, beans and basil and stir
- Stir in the sweetener
- Crumble the veggie stock cube over the dish and stir in until dissolved
- Allow the stew to simmer to incorporate flavours
- Serve hot
