Vegan Butter Bean Stew

Ingredients
  1. 1 finely diced onion
  2. 1 finely minced clove of garlic
  3. 1 tsp oil for frying
  4. a pinch of ground cinnamon
  5. 1x 400 g tin of chopped tomatoes
  6. 1 tsp dried basil
  7. 1x400g of butter beans
  8. 1 tsp sweetener
  9. 1 vegetable stock cube
Instructions
  1. Fry the onions and garlic in oil on medium heat
  2. Add cinnamon and stir
  3. Add tomatoes, beans and basil and stir
  4. Stir in the sweetener
  5. Crumble the veggie stock cube over the dish and stir in until dissolved
  6. Allow the stew to simmer to incorporate flavours
  7. Serve hot
