The resistance of capitalism to veganism lies at least partly in that eating plants directly reduces the opportunities to profit from (not strictly neccesary) food processing activities.
Mock meat'n'dairy puts the opportunity to profit from (not strictly neccesary) food processing activities back into the game.
I don't think there is anything particularly wrong with profiting that way, btw. The lesser of two evils it certainly is?
Actually I do think there is something inherently wrong with profiting from basic human needs like food, clothing, medical care, and shelter. Wanna profit off stuff people don't need but want? Ok I guess. Just not the basics.
