Vegan Recipes-Too Tired To Cook!

My go to is opening a can of lentils, putting it over rice with a little marinara sauce and vegan Parmesan.

A slice of tofu on a toasted English muffin.

I often eat canned corn and green beans with rice.

Sourdough toast with vegan margarine is the best.
 
I have absolutely no problem with numbers 4 (frozen vegetables) and 5 (foods usually considered "snacks" rather than a true meal), so long as it's still healthy. I've seen fresh produce in rather poor condition, and have often read that such "fresh" produce can easily be nutritionally inferior to frozen. But I think that depends on the individual nutrients. As I understand it, vitamin C is quite perishable, especially in green leafy foods such as spinach or broccoli (although citrus fruits keep C longer due to their thick peels). But B vitamins (and vitamin A, which is present in the form of carotenoids) might last longer. I'll have to google about that. Witness the evolution of the English language- a (relatively) new verb!... I google, you google, she or he googles, we google, they google... I googled, etc.

I've also opened a can of something (especially mixed vegetables- instant variety!) and eaten some of it as a "side" without heating it- but I have no problem with that either, since it was properly cooked during the canning process. Mostly I just make sure the can is properly recycled.

I've done every one of those options as well.
Lately I've been into ramen noodles doctored up with all kinds of add-ins.
Oatmeal is another go-to, or other quick breakfast foods for dinner, like a tofu scramble. A scramble can be just tofu and lots of spices, and sometimes I put that on toast.
English muffin pizzas, a quick quesadilla or a wrap also qualify.
 
So.. yeah I rather have fresh veggies than frozen. Canned is my third choice.
I've heard that generally speaking frozen veggies are better nutritionally. I guess because the amount of time to get to the freezing plant is less than the time for the veggie to get to your table.

My difficulty with frozen veggies is the taste and texture…
For me it’s especially evident in Vegan prepared meals which are frozen, but not limited to those…
To me frozen Broccoli tastes Nothing like fresh Broccoli!
The only frozen veggies I buy are sweet corn and peas and occasionally I will buy oven fries - here in Ireland we have a brand that is labelled Vegan and doesn’t contain anything besides potatoes, oil and salt - most brands contain Lots of other ingredients!
 
I do buy frozen quite a lot in the winter, as the price is better than fresh most of the time. I often roast broccoli frozen, and that helps with the flavor. I usually buy peas, corn, green beans, broccoli and cauliflower frozen, though I much prefer fresh broccoli and cauliflower. Canned is my third option as well. I can do canned corn or beets and maybe green beans once in a while, but there is such a difference in flavor with the green beans that I don't care for.

I always liked canned vegetables, sadly... corn/green bean/peas...probably because of the salt water. I actually like the softer texture.

Broccoli I prefer fresh but I will do frozen quite often. Same with cauliflower. Any other vegetable needs to be fresh brussels sprouts or asparagus, but I don't eat those regularly. Usually only on a holiday.

The last few times that I had Chinese food, the broccoli was very rubbery… I'm not sure if they used fresh or frozen. I tend to think it might've been fresh but I don't know why it would come out rubbery.

Are the vacuum packed beets available in the USA? I will often buy them to use in salads…
Raw beetroot grated is also delicious I think

I've always loved Joan of Arc spicy chili beans over rice with a side of frozen broccoli or some corn stirred in (would love the story of why a canned bean co would be named Joan of Arc 🤔 )
Microwaved potato, or sweet potato
I'll often throw a bag of frozen veggies in the fridge so they're quickly microwaved or stir fried
For a work lunch I'll throw frozen veg over a microwaved potato, rice, and/or beans

yup - I definitely fit all the categories - noodles/soup are one of our go to even if we had noodles for lunch although I try not to do that, my honey is more likely to - a can of chick peas is a treat and I will revert to that happily - we try to stay away from the take out as much as possible, maybe once a month or every six weeks
