I’ve been trying to keep my snacks both vegan and protein-rich, but I’m running out of quick ideas. Right now I rotate between roasted chickpeas, peanut butter on apple slices, and edamame. I’m looking for more options that don’t require a ton of prep.
What’s your go-to high-protein vegan snack?

According to Dr.Gregar you should have a handful of nuts (2 - 3 Tbsp) every day.

So in the mid afternoon when I need a snack I go nuts. Really low prep. And they are not even in that "extra" category because they are in the Daily Dozen. I used to only have peanuts. Because they are inexpensive. But I have read that other nuts have other benefits. So lately I have been buying mixed nuts. I have settled on the which brand I like the most.
I'm trying to include Brazil nuts because I've read that they are good for a few things. but you have to eat them in moderation.
Right now I'm buying Brazil nuts separate and eating just 2 - 3 of them a day. But also having the mixed nuts. The last can of mixed nuts I bought didn't include any Brazil nuts. in fact it was mostly peanuts. So I'm going to shop around some more and find a better brand. Maybe one with the Brazil nuts mixed in. I fill a 3 oz "candy dish" every day and leave it out on my desk. Then I just snack on a few at a time.

My favorite snack used to be 4 Trader Joe's Dark Chocolate peanut butter cups. With a glass of vanilla soy milk. I even learned how to make my own peanut butter cups.

For special treats I defrost some frozen salted edamame in the pod.
