Seems like a good time to start a thread JUST for our favorite vegan cookie recipes!
Whether from online, or homemade, as long as they're vegan or how you make them vegan
Of course no posting recipes that aren't already shared!

These were my inspiration -

Pecan Sandies (4-Ingredients)

These easy Pecan Sandies are melt-in-your-mouth shortbread cookies that extra flavorful and SO easy to make.

I used Country Crock Plant butter sticks, with almond oil
I added the flour and the pecans right to my stand mixer, and did need less than the 2 1/4 total flour called for.

I love The Joy of Vegan Baking's chocolate chip cookie recipe. It's the closest I've come to the non-vegan original Toll House cookie recipe. I do tinker with it some because I like my cookies a little higher than these come out. It calls for 2 1/4 cups of flour, so I make the quarter-cup a heaping quarter-cup.
