Scientists were experimenting with laser stimulation of cone cells in someone's eye (WHAT??!! I thought you were never supposed to look directly into a laser- the intense light would damage your vision?) Test subjects reported seeing a new color they had never experienced.

Although not limited to this subject, there is a really good book called the Immense World, that discusses how some flowers use their colors and patterns to attract and guide insects that can see into the ultraviolet.
