Here are a few of mine:
Lentil and garbanzo falafel
Sharp aged vegan cheddar (takes a looong time to make, and a lot of steps, but so rewarding!)
Lentil meatballs (made with lots of spices and some red wine. Gives it a really good flavor.)
The vegan aged cheddar wouldn't quite work with mac and cheese, because it doesn't melt very well, but the above recipe is liquid, so it would work perfectly.
