Let's keep a running list of staple food items and ingredients that veg*ans should ideally keep in their pantry, refrigerator and freezer.

I'll start with what I can think off the top of my head.

Pantry:
rice
Asian noodles
various types of pasta
whole grains such as quinoa and millet
beans, both canned and dry
canned soups
dry soup mix
canned chili
liquid smoke
canned vegetables
canned tomatoes
tomato sauce
tomato paste
veg*an seasoning packets
dried fruits
flaxseed
oatmeal (porridge), including instant

freezer:
sandwich bread (the freezer is where I keep all my bread)
frozen vegetables

fridge:
peanut butter
soy sauce
salad dressing
tortillas
mustard
 
Beans. All different types of beans. & chickpeas & nuts. :)

Vegetable stock cubes or powder.

Herbs & spices.

Garlic.

I thought of something else: A jar of cooked salsa (good for making Spanish rice in a pinch). Fresh salsa is obviously better, but cooked salsa keeps longer.

Also, I mentioned peanut butter before, but not everyone wants peanut butter, so I should have included other nut butters such as almond butter, cashew butter, soynut butter, etc.
 
Hm my cupboards are very stocked, but they have few vegetarian specialist items. Rice, beans/lentils, nuts, pasta, oats, several types of flour (wholemeal, white, gram, rye, bread), oil/margarine/shortening/suet, every spice under the sun (whole and ground), fresh herbs in the garden, almond milk, wine/beer/cider, vinegar (I seem to have loads: balsamic, cider, sherry, rice wine, malt, distilled for pickling), just about every type of sauce (ketchup, chilli, hendersons relish, mushroom ketchup, brown sauce, etc), dried fruit, baking soda/powder, dried yeast, sugars... okay I'll stop.

But I think the most important things are just flours and fats, they are the things that I really feel when I run out of, they go in all baked goods (virtually), and baked goods are my favourite things :)

Here's my staples list. There's a good range of meals in there, and even when I run out of just about everything it's fairly chap to stock back up. Plus, almost everything has a decent shelf life.
