one of the hardest thing vegans needs to give up is cheese. most of us were back in time a meat lover people, or more like cheese lovers xD
I have met many vegans that found hard time giving up cheese than meat (myself speaking), there were many times my girlfriend had to think of a logical way just to cross the bridge and allow cheese in our meals or snacks. The funny part, I did the same when my hunger rises lol
However, Just because you are vegan, it doesn't mean you don't have to eat "cheese" In fact, putting aside the commercial vegan cheese products that might be tasteless... there are many homemade vegan cheeses that would entice you. I have yet to make a recipe for all of them (which I will by time) but, I made 3 different type of cheese recipes that you might like. Actually, if you are into one of these types: Parmesan Cheese, Mozzarella Cheese or Regular Firm Cheese. Then this article might be very helpful to you: Easy and Simple Vegetarian Cheese Recipes

If I had a nickel for every time I heard someone say, "I would be vegan but for the cheese."

I've brought this up before on this forum. Cheese is actually an addictive substance. I read an article a while back about some researchers who had an extra MRI or brain wave thingie and were just making up experiments to use on them and they did on what various foods and drugs did to you. Cheese had a similar effect as cocaine. If I remember right they were looking at fat, salt, sugar, and caffeine. and not only do they affect brain chemistry but they are very powerful when combined. this probably explains the lines out the door for Starbucks $5 lattes. Anyway, cheese has lots of fats and salt.

the longer I go vegan the less I even want cheese. I used to buy the fake cheeses in the supermarket. I rarely do anymore. Sometimes I buy some fake mozzarella shreds or fake cheddar shreds for homemade pizzas or burritos. but mostly I just skip the cheese in the burritos and when making homemade pizza I'll make some mox-a-rella out of cashews.

I love, but don't eat, grilled cheese sandwiches.
Now I eat GRILLED PEANUT-BUTTER Sandwiches.
Almost as tasty.
