Off-and-on, during my winter baking season, I've been trying to invent a good vegan pumpkin cornbread, but the pumpkin wasn't leftovers. It tasted kind of nice and had a beautiful golden-orange color, but the texture wasn't quite right.
 
I will occasionally make banana bread with brown bananas, but I'm not likely to buy produce without a specific use in mind. I'm much more likely to have soup or casseroles (or restaurant food) leftover than individual components.
 
I've only tasted carrot cake (that is one of the few cakes I like). But I've always wanted to make banana bread, and other kind of bread with veggies in. That would be the next week project I think! :)

Carrots never end up being left over, neither do courgettes (zucchini). The only pumpkins I buy ever are for carving at Hallowe'en.

General rule in our house for using up leftover single ingredients is soup for veg and smoothies/soy milkshakes for fruit, though.
