1 can black beans,rinsed and well drained
1 can back-eyed peas,rinsed and well drained
1 can shoepeg corn (tiny, white kernels),drained
1 red bell pepper, diced
1 green bell pepper, diced
2 tomatoes, diced
1 bunch green onion, diced,including green ends
1 jalapeno, seeded and diced(optional)
2 avocados, diced(optional)
handful of cilantro, chopped
juice of two large limes
splash of olive oil
Few dashes of sea salt

In a large bowl,combine ingredients and mix well. Refrigerate for at least one hour (overnight is better as the flavors have time to meld).Enjoy with tortilla chips.
