Vegan Tangy Lentil and Cumin Spread

  2. 1 cup of dried red lentils
  3. Water to cover and cook the lentils
  4. 1 large grated carrot
  5. 1 very finely diced onion
  6. 2 tsp oil for frying
  7. 1 tsp ground cumin
  8. salt and pepper to taste
  9. 1/2 tsp orange zest
Instructions
  1. Rinse the lentils and pick out any stones
  2. Cover lentils with water and place on high
  3. Turn down to simmer and allow the lentils to get very soft
  4. Drain off excess water
  5. Fry the onion in oil until soft and fragrant
  6. When onion is cooked put it aside
  7. Add the onion, grated carrot and orange zest to the lentils and mix
  8. Add the cumin and salt and pepper and stir
  9. Using an immersion stick or blender and blend very well until smooth
