- 1 cup of dried red lentils
- Water to cover and cook the lentils
- 1 large grated carrot
- 1 very finely diced onion
- 2 tsp oil for frying
- 1 tsp ground cumin
- salt and pepper to taste
- 1/2 tsp orange zest
- Rinse the lentils and pick out any stones
- Cover lentils with water and place on high
- Turn down to simmer and allow the lentils to get very soft
- Drain off excess water
- Fry the onion in oil until soft and fragrant
- When onion is cooked put it aside
- Add the onion, grated carrot and orange zest to the lentils and mix
- Add the cumin and salt and pepper and stir
- Using an immersion stick or blender and blend very well until smooth
