Vegan Sweet Potato Soup

100g lentils
1 onion
Vegan butter
1 garlic clove
2 tbsp curry paste
450g sweet potatoes
1.2 litres vegetable stock
Seasoning
Vegan yoghurt (plain)

Cook lentils in boiling water for 15 minutes. Cook one chopped onion in butter for 8mins until softened and beginning to brown. Stir in garlic clove, curry paste and floury potatoes (peeled and cubed). Cook for 5 mins, stirring.
Drain lentils, add to potatoes with hot vegetable stock and cook for 12-15 mins until potatoes are fully cooked. Whizz in blender until smooth, return to pan, season to taste and heat.
(stir in mint to 142 ml of yogurt and swirl into soup.)

If you eat dairy this can be made with dairy butter and yoghurt.
