Vegan Scandinavian Almond Cake

Beat Well: 1 1/4 C. Raw Sugar
Egg subsitute for 1 egg
1 1/2 t. Almond Extract-- (I used a Tablespoon because Jack and I LOVE almond)
2/3 cup milk -- I used soymilk and it worked just fine

ADD: 1 1/4 C Flour
1/2 t. Baking Powder

ADD: 1 stick melted margarine or butter

Spray pan with Baking Spray Bake at 350 for 40-60 minutes, check for doneness. Edges must be golden brown ( I use a Scandinavian pan. I think you should use a bread pan, usually done in 40 minutes. Cool 20 minutes in pan before removing. Sprinkle with powder sugar!

Variations: before pouring into pan place sprinkle sliced almonds
Add 2oz of melted chocolate or 1/3 cup cocoa!

* I added almonds directly into batter and sprinkled some on top. We baked our for about 45 minutes (we have an electric oven) and it turned out PERFECT!! Thanks for the recipe Bets!! SO easy!!
