One and one half cups cooked black eyed peas (drained and rinsed is using canned)
3 cups cold cooked Basmati or brown rice
1 vadalia onion,finely chopped
2 TBS fresh chives
2 finely chopped peeled tomatoes
2 TBS fresh lemon juice
1 tsp vegan worcestershire sauce
One half tsp tobasco sauce (if you're a scardey cat,you may omit this step)
1TBS olive oil
salt and pepper
Heat oil in wok or large skillet;
saute onion till tender;
add rice,tomato,lemon juice,worcestershire sauce,tobasco,salt and pepper;
heat through;
add black eyed peas, and parsley;
cook until peas are hot;
top with chives and minced jalapenos if you dare;
insert Bubba teeth;
pop in a Walker Texas Ranger dvd
pour up a glass of sweet tea;
enjoy.
