Raw Sweet Potato Pie

Who is making a pumpkin or sweet potato pie for Thanksgiving in the US?

I made my sweet potato pie yesterday and finished it this morning with the whipped coconut milk, sweetened with date paste. It will still be perfect tomorrow on the big day.

I don't like working with raw pumpkin... it's so much easier to use sweet potatoes. This recipe only used 1 sweet potato, unpeeled so I saved all the nutrients. Using a Vitamix made it so smooth, you don't even know it was unpeeled.

I've never seen a real sweet potato pie or heard of one any other place than in the song... "Sweet potato pie and I shut my mouth" LOL - But this looks delicious!

Funny you don't like working with raw pumpkin... I LOVE making homemade pumpkin puree for pumpkin pancakes all winter long. Yum!

I didn't make any pies this year. I was in charge of the green bean casserole. Plus, I'm brining a veggie roast & veggie gravy to our family dinner. Happy Thanksgiving!
