I made these with some leftover pumpkin from baking. Thought you guys might like it!
You will need 1/4 cup gluten free all purpose flour (or use regular a/p flour) 1/2 teaspoon baking powder 1ish tablespoon sugar 1/4 teaspoon pumpkin pie spice (or cinnamon) 1/4 cup pumpkin puree 1 tablespoon non-dairy milk 1/4 teaspoon vanilla extract

Directions
Mix everything well in mug
Microwave around 1.5 to 2.5 min. Mine took 2 min, 15 seconds.

Thank you for the reminder of mug cakes. I have made then a few times and it is amazing and simple and a great little desert when you just want something sweet but not too unhealthy. You can also do pizza in a mug.
