Packed Breakfast ideas

Now that school has started, I have quite a commute in the morning. I leave early, between 6:30 and 7, so in order to sleep as late as possible, I don't eat before breakfast. I end up either getting a pastry at starbucks after I get to school or I pig out at lunch. I want to start packing a breakfast so I can a) save money and b) eat healthier. I know things like lara bars and fruit, but what else can I take? I was also thinking sandwiches I made the night before. I don't mind eating non breakfast foods for breakfast. I want something I can either make the night before or I could grab quickly and that would transport well. Any ideas? Thanks!
 
Bake some breakfast cookies, my wife can't keep enough of the ones she makes. The best part is you can put just about anything you want into them.
 
Breakfast muffin, banana, bottle of orange juice. My go-to travel breakfast.

Sometimes I grab sandwiches, salads, a thermos with a home-made smoothie, cereal bars, or cold tortilla wraps. A few times, I've emptied some cereal into a tupperware box and taken a spoon and an individual carton of soy milk on the train. Only works somewhere that you'll have the stability to eat it, though!
 
bagel sandwiches, or breakfast burritos can be made ahead of time and even frozen. You could also make overnight oats, or just combine oats/fruit/nuts/seeds etc in small baggies or containers that you add hot water to on demand. Smoothies are quick and easy, especially if you portion out all the fruit into bags in your freezer ahead of time. My boyfriend sometimes makes homemade granola bars with protein powder and such added. I am fond of making a batch of healthy, hearty muffins and keeping them in the freezer. Then, it doesn't take long to warm them up in the microwave, or I just take it out early and by the time I am ready for a mid-morning snack a few hours later, it's defrosted. If you can set aside some time each week, you could also freeze batches of homemade waffles, pancakes or french toast.
 
Will you be eating the breakfast on the ride to school or during a break in between classes?

I find things like wraps and burritos easy and not messy to eat on long drives. Wraps with hummus and veggies or tofurky slices. PB and banana or jelly sandwiches or wraps. Bean burritos are always great and can be made weeks ahead of time.
 
I would be eating after I get there. I can't drive and do other things. :p

As for muffins, I can't have cold, leftover muffins on all their soggy nastiness. :( sorry, it has to be fresh out of the oven or not at all for me.
 
I love brown rice with a little vanilla almond milk, nuts, and raisins. Or quinoa instead of rice. All you need is a thermos to keep it warm. (My husband likes it cold, but no. )

would you have access to boiling water? Like from a kettle? I make little bags of porridge oats with a few tsp sugar and some dried fruit and nuts and all they need is hot water. We use them when we stay in a hotel.
 
All the meals from vlb take lots of prep. Besides, I refuse to support vlb after Jennifer went off the deep end.

1 large apple, sliced into rough triangles (honeycrisp or fuji or similar) 1 1/2 cups brocco-slaw (or regular cabbage slaw) 1/4 cup raw sunflower seeds 2-3 Tbsp Tahini 2 Tbsp seasoned rice vinegar 1 cup steamed edamame salt/pepper to taste

Toss and serve!! Chill leftovers in fridge.

If you have some kind of chunky casserole in the fridge that sits well in a wrap, you could bring some in a container and later spoon it into a wrap. Good way to use up dinner leftovers.
