Not all tofu is made from soya beans

Did you know that not all tofu is made from soya beans? No, well neither did I until recently.

Burmese tofu is made from chickpea flour or besan flour (gram flour).
Incidentally besan flour and chickpea flours are not technically the same thing - besan/gram flour is made from skinned black chickpeas and chickpea flour from unskinned white chickpeas.

Back to the tofu, it is pretty easy to make and packed with protein so is really good for you and a great alternative for those who don't like soya products or Chinese/Japanese tofu. It can be used in exactly the same way.

Cool! I'm still getting used to chickpea flour, I'm not used to it, but it's so versatile. Have you tried chickpea flour omelettes yet?

I haven't tried chickpea omelettes yet, they are actually on the menu for lunch this week, but I have tried and regularly eat something very similar called La Socca which is basically without the baking powder and extra whipping so in theory should taste the same. Have you come across it?

Well, this is news to me. Thanks for the links. I want to check it out. I have used chick peas flour before, but I had no idea it had these capabilities. Is the gram flour you are referring to, the same flour used for gram crackers? I hope so, and that I can use the name, Besan to get some from the Indian store here.

besan or gram flour (alternative name for it) is made from skinned black chickpeas
chickpea flour from unskinned white chickpeas.

Just different versions of chickpeas that is all.

I've been vegan for 3 1/2 years and this is new to me, it sounds good and I like chickpeas, I may have to try this one, thanks for sharing!

I'd like to track some of this down! I'm soy intolerant soy this is a wonderful find, which after years of being vegan I didn't know even existed! Excellent thread, don't know why I didn't see it sooner. :grinning:
