I did extensive bloodwork which showed a normal level of beta carotene. I eat a lot of dark greens so I would think it would be. However my vitamin A retinol was low. Vitamin A retinol is in animal products I've read, but beta carotene can be converted into retinol. Does this mean that it's not converting properly? Has anybody else had this problem?

I don't know. You probably need to kick that back a doctor.

You do have your facts right tho.

A vitamin A deficiency is very rare in first world countries. even among vegans.

Another study found that eating fat-containing avocados with tomatoes or carrots enhanced absorption. Try sprinkling a little flaxseed or olive oil on cooked vegetables, add a dash of salad dressing to your green salad and eat a handful of nuts with your daily fruit to help improve absorption and conversion.

sweet potatoes are one food that I dislike, but still make myself eat them in the most palatable ways.
I'm ok with them if they're spicy, my favorite being peanut stew
