I'm not sure how to categorize this. To some it may be consider a side dish or an appetizer. In our house it's a main meal that stands on it's own. We've made this a few times now and it has quickly become a favorite.

1 package (12oz - 16oz) frozen soy crumbles
1 large bag of plain tortilla chips
1 medium onion finely chopped
1 small green bell pepper seeded and chopped
1 jalapeno pepper seeded and finely chopped
1 tablespoon minced garlic
1 can of vegetarian refried beans
16oz jar of chunky salsa
2 - 4 cups Daiya or other vegan shredded cheddar
3 tablespoons chili powder
Seasoning salt
Black pepper

Toppings:

4 scallions (green part chopped)
Black olives
Diced tomatoes

Directions:
Preheat oven to 350f
Saute in oil onion, green pepper, jalapeno, and garlic until onions are translucent.
Add soy crumbles and chili powder heating thoroughly.
Next add the refried beans, salsa, and 1 cup of the cheddar cheese. Combine stirring constantly, cooking until cheese is melted. Also this is a good time to add your seasoning salt and black pepper to taste.
Pour bag of tortilla chips into a large baking dish. Pour our mixture on top of the chips.
Top with the rest of cheese, olives, scallions and diced tomato.
Bake for aproximately 10 - 15 minutes.
