Vegan Mincemeat

300 g sultanas
200 g raisins
100 g chopped dried apricots
50 g chopped mixed peel
50 g dried cranberries or cherries
50 - 75 g blanched chopped almonds or pecans
50 g vegan suet or vegan butter (melted)
1 small chopped (finely) Bramley apple
grated zest and juice of 1 clementine
grated zest of 1 lemon
50 - 75 g muscovado sugar or coconut sugar
1/2 tsp grated nutmeg
1/2 tsp ground ginger
1/2 tsp mixed spice
2 tbs brandy or Cointreau

Chop the almonds, apricots, apple and cherries to the size of a raisin.
Mix all the ingredients except for the alcohol.
Place into a large bowl, cover and leave for a few hours.
Place the bowl in the oven for 3 hours at 120 °C/225°F.
Add the alcohol and if necessary, add more spice or/and sugar to taste.
Place into either clean jars or airtight container in the fridge.
This will make approx. 1 kg of mincemeat. It really is worth making and is much tastier
than any shop brand including the Luxury ones.

Tip : You can subsitute any of the dried fruit with other varieties e.g. figs, dates, blueberries, walnuts or even pecans. You can also use an orange instead of a clementine. Sweetener can also be used instead of sugar.
You could also gently simmer the mincemeat on an electric hob if you don't have an oven.

I never had homemade mincemeat...only the stuff from a jar.

My mom used to make really tasty mincemeat cookies every Christmas...I wonder, if I can find the recipe, if I can successfully veganize it. They were soooo good!

It really is easy peasy and tastes so much better than shop made mincemeat. You will also have the most wonderful aroma in the house whilst it's cooking.

I'm going to be putting up quite a few festive desserts made with mincemeat in this section. So watch out...:p
