Vegan Lumpia (egg rolls)

Lumpia Wrappers (Chinese spring roll wrappers would work too)
Yellow Squash
Cabbage
Carrots, diced very small
Red potatoes
Zuchinni
Onion, chopped
Garlic clove, crushed
Morningstar Sausage Crumbles (Optional)
Extra Virgin Olive Oil

Shred squash, cabbage, potatoes and zuchinni
Sautee garlic and onion until transparent
Add the rest of the vegetables and morningstar crumbles and sautee until veggies are soft
Throw in whatever spices you like and just keep tasting it until you like it. I use a little garlic salt and onion powder.

When all the veggies are done scoop about 1 Tablespoon or so into the wrapper and wrap it up. Brush a little water on the top corner of the wrapper before closing it to hold it together.

You can either fry these in oil or bake at 375 for about 20-25 minutes. If you bake them try brushing them with a little melted butter or EVOO to crisp 'em up a bit.

Dip in sweet and sour or sweet chili sauce if you have it. This is Jack's all time favorite dinner!!
 
Ive changed up my recipe a bit since I originally wrote this recipe. Now a days I only use potatoes, broccoli, onion, garlic, and carrots. The texture and taste is perfect this way.
