Vegan Lime Crusted Cauliflower Bites

These were a hit!

  1. 1 medium sized cauliflower cut into bite sized pieces
  2. 2 cups fine bread crumbs (gluten free or not)
  3. 1 cup nutritional yeast
  4. 3 TBS lime juice
  5. 1/2 cup olive oil
  6. Black pepper

  1. Preheat the oven to 175 c.
  2. Toss the cauliflower in s small amount of olive oil and arrange cauliflower on an oiled baking sheet. Put tray in preheated oven.
  3. Mix together the bread crumbs, nutritional yeast, lime and oil. It will become moist and crumbly.
  4. Check the cauliflower in the oven and turn to ensure all sides get brown and cook properly.
  5. When the cauliflower can be pierced with a fork take out of the oven.
  6. Individually coat each piece of cauliflower in the bread mixture. You can use your fingers to make the mix stick if necessary.
  7. Place cauliflower back on baking tray and put back in the oven
  8. When the coated cauliflower is golden bring it out of the oven. This will take approximately 5-10 minutes.
