Vegan Lemon, apple, carrot loaf

  1. 3 green apples thinly sliced ( I do not peel mine)
  2. 1 cup carrot grated
  3. Juice of one lemon
  4. 1 TBS lemon zest
  5. 1 cup sultana
  6. 3/4 cup of oil
  7. 3/4 cup fine sugar ( I use brown which I grind down)
  8. 1 tsp vanilla essence
  9. 1 1/2 cups gluten free self raising flour ( if using plainéwheat flour add 1 tsp baking powder)
  10. 1 tsp ground cinnamon
  11. 1/2 tsp salt
  12. 1 cup vegan cream cheese
  13. 1 cup icing sugar
  14. 2-4 drops lemon essence
  15. water if needed to thin the icing
  16. Lemon peel grated for garnish
Instructions
  1. Prepare a greased loaf pan and put the oven at 200 c
  2. Coat the sliced apples with the lemon juice and allow to sit
  3. Add the carrot, sultanas and lemon zest and stir again
  4. Blend the oil and sugar until creamy
  5. Add the vanilla essence and blend again
  6. Put the flour in a bowl with the cinnamon and salt and mix
  7. Add the apple/carrot mixture to the flour and stir to coat all of the fruit with the batter
  8. This will be a thick mixture and may seem over taken by fruit and veggies. This is fine
  9. Tip into the prepared pan and allow to cook for 30-45 minutes.
  10. Mix the icing sugar and cream cheese together until thick and blended
  11. Add lemon essence and thin with water if needed
  12. When loaf is cooled and ready glaze with the prepared icing

Sounds amazing! Could have said looks amazing but I'll take your word for it, judging by the empty plate, haha!
