250 g chopped dried figs
125 g muscovado sugar
250 g vegan All Bran (Asda)
600 ml cold Earl Grey tea
1 pinch of salt
2 tbs golden syrup
4 tsp baking powder
250 g wholewheat flour
Sift the flour, salt and baking powder into a large baking bowl.
Put the figs, bran, sugar, golden syrup and tea into another bowl and leave to stand for 45 mins.
Add the wet ingredients to the flour and stir thoroughly.
Line a greased loaf tin (1kg) and add the batter.
Bake oven 180 °C for 1 h 1/4 - 1 h 1/2. Test with a skewer.
Turn onto a wire rack to cool.
