I usually sautee veg in minimal oil when I am making sauces but I wanted to reduce my oil intake so I tried baking them instead. Preheated the oven to 200 and lined a tin with baking paper to prevent sticking and burning then put in the mixed, chopped veg and put in the oven for 15 minutes. Then I added them to the liquid part of the sauce and heated through. It was a much tastier sauce than usual and healthier too.
