Vegan Cuban Black Beans & Brown Rice

1 C. Brown Rice
4 C. Dried or 2 cans organic black beans
1/4 C. Packed cilantro
1 onion, chopped
2 fresh banana peppers, chopped
2 T. Balsamic vinegar
2 limes cut into wedges
Olive oil

Cook rice, I use a rice cooker so not sure how to do it on the stove
Sautee onion and banana peppers in olive oil until onions are clear
Add beans, simmer a couple minutes while flavors blend
Add chopped cilantro, let flavors blend
Add balsamic vinegar, blend flavors

Serve over rice, squeeze lime juice on top

*Great as its own dish, in burritos or as a chip dip.
 
Sounds good. I'm assuming by 4C dried beans you mean 4C of cooked beans (from dry, so start w/about 2C dry)? Also assuming the cilantro is fresh?
