Vegan Cream of Cauliflower Soup



Simmer a head of cauliflower in water, in a covered pot, until tender. Reserving the cooking liquid, remove the cauliflower to a bowl and cut it into fine pieces. Make a roux out of equal parts margarine or canola oil and flour; thin gradually with reserved cooking liquid, stirring constantly. Add additional water if needed. Season with Mrs. Dash onion and herb (or other seasoning of your choice), veggie boullion (optional), nutritional yeast, and freshly ground pepper to taste. To add protein, add silken tofu that has been well processed in a food processor or blender.Stir in cauliflower and heat through.
