I've made cookies with flax goop, besan, and simply just leaving out the eggs, but this today I had cooked a batch of chickpeas so I tried subbing the aquafaba. These are good!
Preheat oven to 350 F
cream with a mixer, or whisk really well-
1/2 cup veg oil
3/4 cup brown sugar
3/4 cup white sugar
add 1/2 cup chickpea liquid (aquafaba)
1 teaspoon vanilla (optional)

sift together-
2 cups flour
1 teaspoon baking soda
1/2 cup cocoa
1 Tablespoon instant coffee (optional)
dash salt
Add chopped walnuts or chocolate chips. I didn't measure, i divided the dough, half maybe 3/4 chopped nuts and a handful chips to the other half.
add to the creamed mixture and mix well.
I used parchment paper, but if not, I would suggest spraying cookie sheet with baking spray, or lightly greasing.
I baked 12 minutes. They didn't spread much at all.
Very brownie like, in fact the closest I've had to regular brownies! :lick:
