Vegan Blueberry Banana Muffins

3 bananas, nice and ripe
1/4 c vegetable oil
1/2 c sugar
1tsp salt
1tsp baking soda
2 1/2 c flour, divided
3/4 c fresh (or unthawed frozen)blueberries
1/2 c brown sugar
4 TBS margarine of choice

Preheat oven to 350

In a medium sized bowl,mash together nanners, oil, and sugar. Set aside.
In a small bowl,sift together salt,baking soda, and 2 c, flour. Add this to banana mixture,and stir by hand till well blended. Gently fold in blueberries.
Lightly spray muffin tin with non stick spray. Fill each tin 2/3 full with muffin mix.

Crumb Topping:

In a small bowl, add remaining flour,brown sugar and marg. Mix with a fork till mixture becomes crumbly.

Sprinkle each muffin with crumb topping. Bake for 25 minutes, or until a toothpick inserted comes out clean.

Enjoy. Your kitchen will smell fantastic!
