Vegan Banana Cinnamon French Toast

3/4 c plant milk ( I used unsweetened almond)
2 large bananas
5 tbs. flour
splash of vanilla
1/2 tsp almond extract
1 1/2 tsp. cinnamon
vegan margarine (just a bit-I used about 2 tbs)

French bread (slightly stale is best),sliced a bit thick,Texas toast, or sliced bread of your choice. I was able to easily batter eight slices, but the bread used was rather small in size.

Slice bananas ;
add bananas and remaining ingredients to blender or food processor till all is well mixed;
pour into shallow baking dish or pan and set aside;
gently dip slices into mixture, allowing about 30 seconds on each side to absorb mix;
fry in melted marg in a medium hot skillet till golden and toasty on both sides.

Serve with maple syrup or favorite topping. I also sliced an extra banana and let the slices cook along with the toast for a delicious addition.
