Vegan Aloo Phujia (spicy taters)

1 medium chopped onion
1/4 c. vegetable oil
1 lb potatoes, peeled and cubed
1 tsp salt
1/2 tsp cayenne pepper *
1/2 tsp ground turmeric
1/4 tsp ground cumin
2 tomatoes, chopped
2 TBS chopped parsley

Lightly brown onion in oil in a large skillet;
stir in spices;
add potatoes and cook 1o minutes,stirring occasionally;
add tomatoes;
cover and cook over medium heat till potatoes are tender;
sprinkle with parsley.

* This is quite spicy! You may want to sprinkle with the cayenne and taste as you go.
