They would be fine with out the pistachios I would just add more walnuts and cashews to adjust so the consistency is the same! Let me know how it turns out! Fresh mangos are life. I moved from Miami to Connecticut and am really missing the tropical fruit more than I thought I would!
You can try making cheese from nuts for example you take soaked cashews and blend them. Then you sprinkle some probiotics into the cashew mixture which allows it to ferment and then you have cheese.
I flavored mine with turmeric but you can go in and direction! The possibilities are endless.

I have forever been skeptical of the flax egg and I recently tried it, I made quinoa kale bytes and it worked quite well. I would say ground flax is your best bet but consider the moisture you are losing so add a little apple sauce.
